Awesome & Easy Corn Casserole

This is from AllRecipes.com and it's become a staple for any family get-togther. It's ridiculously easy to make and never, ever leaves any leftovers. It's just THAT good. I have a photo somewhere, I just need to find it.

This recipe is for a 9x9 baking dish. If it's just you and your hubby, then the 9x9 dish will be perfect. But if it's going to be 6 or more people, then double it with a 13x9 pan.

Ingredients:

1/2 cup butter, melted
2 eggs, beaten
1 (8.5 ounce) package dry cornbread mix
1 (15 ounce) can whole kernel corn, drained
1 (14.75 ounce) can creamed corn
1 cup sour cream

Preheat oven to 375 degrees (175 celsius) and lightly grease a 9x9 baking dish.

In a bowl, combine all of the ingredients. Spoon mixture into baking dish. Bake for 45 minutes or until the top is golden brown.

  1. That sounds delish!! Do you serve that as the main dish (with a salad and bread kind of thing?) or is this considered a side?

  2. We've always served it as a side dish. It doesn't have a lot of protein. It's kind of like a cross between cornbread and a souffle.
